I can eat these all day, fantastic with cheese on top, or just plain with butter and a little bit of sea salt.

Egg & bacon muffins

Most of us that have done the low carb dieting, we probably have eaten our share of eggs and bacon. Here is a different way of preparing an egg & bacon breakfast.

Almond and pistachio dukkah

Traditionally, dukkah is made using hazelnuts, but you can mix it up with any nuts and spices you like. Try combining walnuts and fennel seeds, or pine nuts and cinnamon. Sprinkle it on cauliflower and pumpkin before roasting.

Sun-dried tomato and roasted garlic mayo

This is a sauce that is particularly suitable for dipping french fries in, but we use it mostly for burgers. A small layer of this sauce on a home-made cheeseburger … mmmm!

African Peanut soup

This lovely combination of onion, sweet potato and peanut butter results in a fantastic creamy soup with buckets of flavour. This spicy soup is made in a jiffy and is perfect as an everyday dinner. It can easily be made the evening before, and reheated before serving.

Taco/fajitas seasoning

This is a recipe for homemade taco/fajitas seasoning mix. Storebought spicesmixes often contain flavorenhancers and also sugar, which is totally unnecessary, when making your own is so simple, healthy and cheap.

Cauliflower Risotto with mushrooms and bacon

Love Risotto? Me too! Hate what it does to your waistline? Then try this recipe …. cauliflower risotto a healthier alternative where the cauliflower is a great substitute for rice, made in just 30 minutes or less!

Roasted paprika soup with pistachio oil

This is an awesome soup that I make over and over again. First time I made it, my son Martin of 12-13 years old, came into the kitchen while I was grilling the red peppers. He commented that they both looked and smelled burnt, and I explained that this was not a mistake, but the recipe actually is like that. Then he immediately replied, “oh, the recipe is perfect for you, mom, where it actually says you are supposed to burn the food!” I really have no idea where he gets it from ….

Tom Kha Kai

This classic thai-soup Tom Kha Kai is definitely one of my favourite soups. Lovely, pure flavours, with a good kick of chili. The secret is to choose the perfect Thai Curry paste, it has to be red and strong. On a cold winter’s day I just increase the amount to 3 tbsp, to get some extra heat.

Cauliflower soup with Gorgonzola and shallots

This lovely cauliflower soup is a quick and delicious every day meal, but also “posh” enough to serve to guests. It is also supereasy to prepare in advance, bake the shallots and make the basis of the soup. Then all you have to do is add cream and gorgonzola, and heat it up, right before serving.

Ceviche – raw marinated salmon

Thank you for an excellent recipe, my dear sister Elisabeth! It turns out raw fish can be more than just sushi, in this case lemon and lime juice is used to “cook” the fish, and adds a lot of freshness. This is a dish that can be served with toasted bread and a green salad, and is suitable for lunch or as a starter.
