For some, strawberries and avocado sounds like a really weird combination. But I can assure you, its yummi! And the light green color of the avocado cream looks lovely 🙂
- 400 gr strawberries
- 1 avocado
- 100 gr mascarpone
- 100 gr greek yogurt
- a pinch of vanilla
- 1 lime, juice and zest
- 1 handful lemon balm, finely chopped (citroenmelisse), optional
Rinse and clean the strawberries, and half or quarter them, depending on size. Mix avocado, mascarpone, lime juice, lime zest and vanilla in a food processor, and run to a smooth cream (or use a stick blender). Mix in the lemon balm, if using. Carefully mix in the greek yogurt. Keep chilled.
Divide the strawberries on 4 dessert plates, and dollop generously with the avocado cream.
