For some, strawberries and avocado sounds like a really weird combination. But I can assure you, its yummi! And the light green color of the avocado cream looks lovely 🙂
- 400 gr strawberries
- 1 avocado
- 100 gr mascarpone
- 100 gr greek yogurt
- 2 ts sugar
- a pinch of vanilla
- 1 lime, juice and zest
- 1 handful lemon balm, finely chopped (citroenmelisse), optional
Rinse and clean the strawberries, and half or quarter them, depending on size. Mix avocado, mascarpone, lime juice, lime zest, sugar and vanilla in a food processor, and run to a smooth cream (or use a stick blender). Mix in the lemon balm, if using. Carefully mix in the greek yogurt. Keep chilled.
Divide the strawberries on 4 dessert plates, and dollop generously with the avocado cream.
