Egg & bacon muffins

Most of us that have done the low carb dieting, we probably have eaten our share of eggs and bacon. Here is a different way of preparing an egg & bacon breakfast.

  • 100 gr bacon
  • 1-2 shallots
  • 4 eggs
  • 100 gr grated cheese
  • 50 ml olive oil
  • chopped fresh thyme (or dried)
  • ½ tsp white pepper
  • butter or oil to grease the muffintray

Chop bacon and onion, and saute until golden and cool off.

Whisk the eggs, and mix in the bacon/onion mix and the rest of the ingredients.

Divide the mixture in the muffin baking tray, and bake in the oven on 200 degrees C for 20 minutes, or until the mixture has stiffened.
