This dish is remarkably tasty in spite of its very simple ingredients and preparation.
- 4 x 150-180 gr cod fillets
- 2 avocadoes
- 4 tomatoes
- Olive oil
- Parsley, if desired
Cut the avocado and tomatoes in cubes, and pour over the oil. Season with salt and pepper, and mix well. Sprinkle with parsley, if using.
Fry the cod filet in the pan, appr 2-3 minutes on each side, depending on the thickness.
Server the cod immediately with the appropriate amount of avocado & tomato salad.
