Chia pudding is both filling and nutritious. We have topped it with strawberries and mint, but feel free to use whatever you like best!
- 2 tbsp chia seeds
- 200 ml coconut milk, oat milk, almond milk or cream
- a pinch of vanilla powder, if desired
- strawberries, mint or whatever topping you prefer
Pour the milk/cream in a glass or a small bowl.
Mix in chia seeds and vanilla powder, if using. Cover with plastic foil and let it stand in the fridge for at least 3 hours, preferably over night. The chia seeds will swell, and you end up with a pudding with a thick consistency.
Top the pudding with fresh berries and mint right before servering.
