Salmon is often on the menu in our house, and the reasons are many, but one is definitely that salmon can be used in so many variations …. with different sidedishes, different spisces and preparation methods. Try this version … with lemon and feta.
- 300 gr salmon
- 1 (small) shallot, finely chopped
- 100 gr creme fraiche
- a few spoons of tomato pure
- zest of ½ lemon (or ½ teaspoon zest powder)
- 50 gr feta cheese
Preheat the oven to 210 degrees.
Grease an ovendish, and put in the salmon filet(s).
In a small sauce pan, saute the shallot in butter, add creme fraiche and tomato pure. Add zest of lemon, and season with salt and pepper to taste.
Pour the sauce over the salmon, and crumble the feta on top. Bake in the oven for appr 20-25 minutes.
Serve with butter-fried green cabage, or any other vegetable you find appropriate.
