Salmon & eggsalad with wasabi dressing

Salmon goes great with lime and wasabi dressing. And with also avocado and eggs on the ingredientslist, this is a tasty and filling dinner salad.

2 portions

  • 2-4 eggs
  • 100 gr asapargus tips
  • 100 gr baby spinach
  • some cherry tomatoes, quartered
  • ½ red paprika, cut into small pieces
  • 1 avocado
  • 300 gr hot smoked salmon


  • 100 gr mayonnaise
  • 2 tablespoons water
  • ½ teaspoon garlic powder
  • a good squeeze of lime juice
  • a few drops of soy sauce (Kikkoman)
  • 2 teaspoons of wasabi paste

Mix the dressing ingredients well, and let it stand until time to serve.

Steam/boil the aspargus tips for 3 mins, softly boil the eggs for 6 minutes.

In a salad bowl mix the baby spinache with the quartered tomatoes and the chopped paprika. Dress with some balsmic dressing, and mix well. Divide over two plates.

Add the sliced up avocado, the aspargus tips and the eggs.

Top off with the hot smoked salmon, and serve together with the dressing.
