Get the festivities rolling with this exotic baked salmon that will take you right through summer.
- ½ tsp ground coriander
- ½ tsp ground cumin
- ¼ tsp ground ginger
- ¼ tsp ground turmeric
- 300 gr salmon
- 1 long red chili, finely chopped
- 1 lime, juiced
- 2 tbsp.extra virgin olive oil
- 2-3 tomatoes, chopped
- 1-2 avocado, chopped
- a bunch of coriander, leaves picked
Preheat the oven to 200°C.
Mix the spices with salt, and use two thirds to spice the salmon on all sides.
Spray an ovendish with some oil, and place the salmon. Scatter with half the chili and half the lime juice. Cover with aluminium foil, and cook in the oven for 20 minutes.
Mix the remaining spice mixture with the remaining lime juice and the 2 tbsps. of oil, and whisk together to a dressing.
Mix the tomatoes, avocadoes, coriander and the remaining chili to a salsa. Pour over the dressing and toss.
Serve the salmon with the salsa on the side.
