Green prawn curry

This light and lovely seafood dish is a flash in the pan, but will fast become a family favourite!

Heat coconut oil in large frying pan or wok, and cook the curry paste for a minute or so, stirring well. Add coconut milk, stir well, and bring the milk up to simmering point then add the gambas. Allow to simmer for about 5 minutes, or until the gambas are cooked through. Season with salt or fish sauce.

Garnish with red chilli, spring onion and the fresh coriander leaves. Serve with cauliflower rice on the side.
