This is a great salad to make on the barbecue, goes well most grilled meats and fish.
- 2 yellow pointed peppers
- 2 red pointed peppers
- 3 tbsp olive oil
- 1/2 lime, the juice
- 1 handfull of mint (15 gr), chopped
- 100 gr feta
Turn on the barbecue grill. Half the peppers, and remove seeds. Cut each half into 4 equal size pieces. Mix the peppers with 1 tbsp of oil. Grill the peppers on the barbecue of 6-8 minutes, turn after half the time.
In the meantime, mix the remaining 2 tbsp of olive oil with the lime juice, half the chopped mint, salt and pepper, so it becomes a dressing.
Mix the roasted peppers with the dressing, and plate it. Crumble the feta over the peppers, and garnish with the remaining half of chopped mint.
