This lovely combination of onion, sweet potato and peanut butter results in a fantastic creamy soup with buckets of flavour. This spicy soup is made in a jiffy and is perfect as an everyday dinner. It can easily be made the evening before, and reheated before serving.
- 1 onion, roughly chopped
- 1 red chili, roughly chopped
- 4 cloves of garlic
- 2 tsp grated ginger
- 1 litre vegetable bouillon
- 2 sweet potatoes, in large chunks
- 400 gr chopped tomatoes
- 100 ml good quality peanut butter
Saute onion, garlic and chili in some oil over medium heat, until soft. Add ginger and let it simmer for another minute or so.
Add vegetable stock, sweet potato and tomatoes. Bring to the boil, and let it simmer until the sweet potatoes are cooked through.
Add peanut butter, and process it all to a smooth soup by using a stick blender. Season with salt and pepper to taste.
