Shrimp truffles with pistachio

This is a nice little snack, easy to make, looks good, and tastes fantastic!

  • 100 gr shrimps, peeled
  • 150 gr Philadelphia cheese, room temperature
  • 1 tbsp chives, chopped
  • 50 gr pistachio nuts

Dry the shrimps with kitchen  paper, and coarsely chop them. Mix the shrimp with Philadelphia cheese and chives. Season with salt and pepper to taste. Put the pistachio nuts in a blender, and finely chop them. From the shrimp and cheese mix, make small balls, and roll them in the ground pistachios, so they are totally covered. Put on a serving plate, and let stand a few hours in the fridge, to stiffen up.
