Mediterranean meatloaf

When you want a quick and easy everyday dinner, recipes like this are great. Ok, it does take a long time in the oven, but the prep work goes very fast!

  • 500-600 gr minced meat
  • 1 small red onion, grated
  • 1 carrot, grated
  • 50-100 gr feta cheese
  • 2 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 egg, beaten
  • basil leaves, shredded
  • 1 zucchini, thinly sliced
  • 300 gr cherry tomatoes
  • 1 garlic clove, crushed
  • olive oil

Preheat oven to 200°C. Grease base and sides of a 7cm-deep, 10cm x 18cm (base) loaf pan, or a 25cm diameter round cake pan.

Combine onion, mince, carrot, crumbled feta cheese, Worcestershire sauce, tomato purée, egg and basil in a bowl. Mix well. Press into prepared pan.

Place zucchini, tomatoes and garlic in a bowl. Spray with oil. Toss to combine. Spoon over meatloaf. Bake for 60 to 80 minutes or until meatloaf is firm.

Let it stand for 10 minutes before slicing and serving. Excellent with a simple green salad.
