This is a fast and simple fish soup with a little bit of heat, and tastes delcious!!
- 1 onion, finely chopped
- 3 garlic cloves, finely chopped
- 2 red chilies, finely chopped (or 1-2 teaspoons of sambal oelek)
- 1 leek, finely chopped
- 50 gr spinach (optional)
- 1 large red paprika, in small pieces
- 200 ml water
- Fishstock, 1 block
- 200 ml double cream
- 400 gr fish, cod or salmon, in pieces
Saute onion, garlic and sambel in some butter, without coloring. Add the leek, spinach and paprika, and cook for a further few minutes.
Boil the water, and dissolve the fish stock block. Add the fish stock and the cream to the pan, and bring to a boil.
Let it simmer for 10 minutes, and take off the heat. Add the fish, and let it cook in the residual heat. Season to taste and the amount of butter you may desire.
