Mussels with coconut milk and coriander

When the summer is almost over, then we eat mussels. My dear sister gave me this recipe, and this is virtually fast food, takes 10 minutes to make, and tastes fantastic.

  • 1 kg mussels
  • 1 can coconut milk
  • 2 garlic cloves, finely chopped
  • a little grated ginger
  • 2 spring onions
  • juice from ½ lime
  • 1 small bunch of coriander
  • 1 red chili, finely chopped

Heat up some oil in a (mussel) pan. Saute garlic, chili and ginger for a minute or so, and then add the mussls. Stir well.

Add the coconut milk, and put on the lid. Let the mussels steam until they have opened up. Scatter over with spring onions and coriander, and drizzle over lime juice to serve.
