Chicken breast with ricotta and ham

This is yet another variation of the chicken breast, and even a good one 🙂

  • 4 chicken breasts
  • 4 slices of cured ham, parma-, prosciutto- or similar ham
  • Ricotta cheese, 1 tbsp per chicken breast
  • 1-2 red onions, sliced in rings
  • finely chopped parsley and chives

From the side, cut a pocket into each chicken breast, with a sharp knife.

Mix the ricotta with the herbs, and divide the mixture over each slice of ham. Roll up the ham, and push it into the chicken breast.

Season the chicken, and fry on medium heat until the chicken breast is golden brown and cooked through. A few minutes before the chicken is done, add the onion rings.

Serve with salad and mashed cauliflower.
